S.T.R.E.N.G.T.H. - Strengthening Through Recognition, Emplasizing, Natural Gifts, Training, and Highlighting
The Expanded Food and Nutrition Education Program (EFNEP) is committed to teaching limited-resource families how to make informed dietary choices and become more effective managers of their available resources. Since its beginning, peer educators have worked directly with individuals and families, in their homes and communities, to offer a series of lessons. These peer educators continue to be key to the success of EFNEP. Program leaders and EFNEP supervisors lead peer educators in becoming top performers by optimizing their unique strengths to create well-rounded teams through:
  • Investment in professional development programs that hone skills and focus on strengths.
  • Teaching, informal coaching, mentoring, and leadership opportunities.
  •  Highlighting client success and behavior changes.
  •  Receipt of certifications, awards, promotion, and merit pay.
  •  Furthering goals, aspirations, and education.
Utilizing strategies such as these while managing essential skills results in higher programmatic outcomes, increased team morale, more employee engagement, and positioning peer educators for success. Gallup research reports that simply learning their strengths makes employees 7.8% more productive, and teams that focus on strengths every day have 12.5% greater productivity. Attendees will be able to replicate ideas that grow the strength of peer educators.

Breakout Session A2: “Learning Gardens” Community Impact and Nutrition Education in the Garden
Expanded Food and Nutrition Education Program coordinator in Nebraska established a health-related community program to implement sustainable gardens in school settings to encourage healthy eating, physical activity and outdoor play. These Learning Gardens included connecting the expertise of Extension Master Gardeners and the EFNEP coordinator to teachers in two different school programs. Beyond garden planning meetings, weekly Learning Garden meetings included Master Gardeners teaching gardening information and the EFNEP coordinator providing nutrition information and resources to teachers. Teachers were imbued with confidence in gardening as vegetables were harvested and children were more excited than ever to eat vegetables that they had grown in their gardens. Evaluation methods included in-class vegetable preference surveys with youth and post-growing season focus groups and interviews with teachers, Master Gardeners and site directors. Overall results include teachers increase in healthy eating, physical activity in the garden and planting vegetables at home, parents increase in eating vegetables harvested from the Learning Gardens, and a growth in children's excitement for and knowledge of different vegetables. The presentation will detail the program model and sustainability components. Lessons learned, limitations and directions for future development will be shared.

Contemporary technologies have the potential to support and enhance EFNEP program delivery by reaching new audiences, increasing educational dosage, and addressing barriers to participant retention and graduation. A panel of states will share how they have written low, medium, and high level technology initiatives into their plans, including the needs assessment process they used to determine appropriate approaches along with how they will evaluate their initiatives. EFNEPDigitalResources.org will be highlighted as a go-to resource for helpful tools and information created by the EFNEP Technology and Social Media Committee. Breakout Session A4: EFNEP Impacts: An In-Depth Study of Champions
EFNEP Champions (volunteers, participants, and partners) play a critical role. Former participants, partner agency staff, and others serve important roles as they reach out to potential program participants, provide opportunities and space for classes, assist with class management, and facilitate program participation by offering transportation, providing food supplies, and material resources to support EFNEP.

Maryland EFNEP developed the Champion Project Initiative where volunteers are recognized for their efforts. These Champions receive service hours and a certificate designating them as EFNEP Champions.

Evaluation of EFNEP has provided evidence of significant diet-related benefits for its participants but also has shown wider economic benefits resulting from potential health care and family cost savings. Other evaluations suggest that EFNEP delivers benefits for participants beyond improved dietary practices, including better self-esteem, employment, community involvement and access to social support through interactions with their peers and educators. Such ancillary benefits have been captured only anecdotally, through qualitative impact statements. We, therefore, examined the impact of Champion Project Initiative by conducting in-depth interviews about how volunteers in Maryland EFNEP (Champions) have benefited from the program. This presentation will describe the process of identifying champions, their contributions and the impact of EFNEP on their lives.

Breakout Session B4: EFNEP Impacts: An In-Depth Study of Champions
EFNEP Champions (volunteers, participants, and partners) play a critical role. Former participants, partner agency staff, and others serve important roles as they reach out to potential program participants, provide opportunities and space for classes, assist with class management, and facilitate program participation by offering transportation, providing food supplies, and material resources to support EFNEP.

Maryland EFNEP developed the Champion Project Initiative where volunteers are recognized for their efforts. These Champions receive service hours and a certificate designating them as EFNEP Champions.

Evaluation of EFNEP has provided evidence of significant diet-related benefits for its participants but also has shown wider economic benefits resulting from potential health care and family cost savings. Other evaluations suggest that EFNEP delivers benefits for participants beyond improved dietary practices, including better self-esteem, employment, community involvement and access to social support through interactions with their peers and educators. Such ancillary benefits have been captured only anecdotally, through qualitative impact statements. We, therefore, examined the impact of Champion Project Initiative by conducting in-depth interviews about how volunteers in Maryland EFNEP (Champions) have benefited from the program. This presentation will describe the process of identifying champions, their contributions and the impact of EFNEP on their lives.

Celebracion Latina: A Latin American Cookbook for EFNEP and SNAP-Ed participants
Goal:  To expand reach to qualified Latino audiences by providing Latin American recipes that are culturally appropriate, healthy, simple, easy to follow and available in English and Spanish.

Targeted Participants: Latino participants qualifying for Tennessee EFNEP or SNAP-Ed

Delivery Method: According to census data, recipes were divided by region to include Latin American countries most represented in Tennessee: Mexico, Central America, South America and the Caribbean. The team researched, tested and selected recipes for palatability, simplicity, cost and nutritional quality. Ultimately, 17 recipes were selected for use in the cookbook. A short description about food and culture was included for each region and all written content was translated in both English and Spanish.

Outcome: A total of 44 surveys were completed by county staff with 74% reporting the project as valuable or somewhat valuable for use in the counties. A total of 815 cookbooks were distributed for use in the counties for EFNEP and 1405 for use by SNAP-Ed.

Conclusions: This project promotes healthy, simple Latin American recipes for ENFEP and SNAP-Ed participants. Relevant, culturally appropriate recipes available in both English and Spanish help expand reach to qualified Latino audiences for EFNEP and SNAP-Ed in the state of Tennessee.

Children Learn to Cook at University of Arkansas at Pine Bluff (UAPB) Summer Camp
The University of Arkansas at Pine Bluff (UAPB) Expanded Food and Nutrition Education Program hosted a youth enrichment summer camp to encourage local children, ages 6 to 11, to eat healthier meals and snacks through hands-on cooking experiences. The camp implemented the Kids in the Kitchen curriculum that focused on basic cooking skills, good nutrition, food safety, and ways to be active. Participants toured the UAPB Aquaculture/Fisheries Center, where they visited the fish ponds and learned about the production of catfish. Later, they learned about vegetable production and planted their own flower or tomato plants, which they took home.

As a result of the camp, twenty children participants learned about topics including kitchen safety, basic cooking measurements, the nutritional content of different foods and beverages and 4-H yoga for children. They also participated in ice-breaker exercises to get to know each other and were able to prepare foods such as pizza, chicken quesadillas, tacos, pudding, shakes, and breakfast treats.

Customizable EFNEP Recruitment Materials
The 50th anniversary is a great time to promote EFNEP!  Colorado EFNEP staff have developed recruitment materials that can be customized with your university logo. In 2011, Colorado EFNEP staff conducted focus groups with participants and agency partners to determine what information would be helpful when recruiting new participants and recruiting agency partners. The results from those focus groups were published in the Journal of Nutrition Education and Behavior and developed into a series of recruitment materials for paraprofessionals and professionals to use in varying recruitment situations.  Materials included brochures for use with potential adult participants and agency partners, posters, customizable flyers, and banners.  While ensuring the content still matched the results of the focus groups, Colorado EFNEP staff worked with graphic designers to develop a new look for the materials in 2018.  Two versions of the brochures were designed to highlight features of the two most widely used EFNEP adult curricula: 1) Eating Smart - Being Active; and, 2) EFNEP Families Eating Smart and Moving More. Poster visitors will have the opportunity to see the materials and learn how these materials can be customized for use in their programs.

Eating Smart - Being Active Recipe Scripts: A Free Tool to Help Paraprofessionals Teach Food Preparation Skills
A hallmark of EFNEP is the use of paraprofessionals as nutrition educators.  As program leaders, it is our responsibility to provide them comprehensive training and evidence-based curriculum. The 2017 revision of Eating Smart • Being Active contains fully scripted lesson plans to assist paraprofessionals in facilitating the lessons; but nothing similar was available for food activities.  One of the most critical topics we teach in EFNEP is food preparation skills and food activities are included in every lesson of Eating Smart - Being Active.  Previously, the recipes were only available as printable handouts and in the Let's Cook cookbook.  The new Recipe Scripts provide scripting for paraprofessionals to use when facilitating the food preparation activities, similar to the lesson plans.  The Recipe Scripts are designed to guide paraprofessionals in actively engaging participants in the preparation of the recipe.  When participants prepare the recipe (with the direction of the paraprofessional), they gain confidence in their ability to prepare the recipe at home.  The recipe scripts also include useful tools (an ingredient list and an equipment/supplies list) to assist the paraprofessional in planning, shopping, and packing for the food activity. Poster visitors will explore Recipe Script components and tips for training their staff.

EFNEP Family Community Cooking Classes
Often times our ready-made audiences tend to be transient and a significant portion are ineligible, not having children in the home. Recruiting for Adult EFNEP participants continues to be a challenge. Possible participants express schedule conflicts in attending day classes, and evening classes are a challenge because of childcare needs.

In an attempt to form groups of eligible participants and eliminate the need for childcare, we designed a family cooking school. We partnered with an inner-city community center and promoted the family cooking school to nearby eligible participants. Utilizing two EFNEP Educators, one conducted Kids in the Kitchen with youth and the other conducted Eating Smart, Being Active with adults, separately, but at the same time. The first part of the youth and adult sessions included nutrition education, physical activity, cooking skills and food and kitchen safety. Then, all participants were grouped appropriately into stations where they experienced hands-on learning from the lesson and prepared an EFNEP recipe. At the close of each session, adults and youth came together to sample the dishes and share experiences. Impact, interest, and retention all improved as a result. We plan to conduct another pilot and develop a set of best practices.

EFNEP Searchable Database and Repository
The poster will describe the capabilities of the EFNEP searchable database and repository. The processes used in the development of the database and screenshots of the landing page will also be shared. This database will provide a record of EFNEP's evolution in relation to program implementation, evaluation and research from its earliest origins into the future.

It is envisioned that the EFNEP searchable database and repository will serve as the permanent home for a comprehensive collection of EFNEP related research. This database also will include other documents such as white papers, oral histories, curricula, theses and dissertations that can inform and facilitate future research and nutrition education programming for limited resource and food insecure communities throughout the nation and its Union Territories.

The repository began with the work of Jan Scholl from Penn State University, working in collaboration with NC2169: EFNEP Related Research, Program Evaluation and Outreach, an AES multistate research project. The project has grown into a collaboration between USDA/NIFA and the National Agriculture Library. Once all aspects of the planned EFNEP searchable database and repository are realized, EFNEP will have a place to go virtually to "Honor the Past, Treasure the Present and Shape the Future."

Engaging middle and high school youth in EFNEP by integrating technology and hands-on activities
The hands-on EFNEP series is effective for engaging elementary-aged youth.  However, this approach is not as effective when working with at-risk middle and high school students.  To determine the best strategy for engaging these youth, Maryland EFNEP integrated innovative techniques into the youth lessons.   EFNEP adapted lessons from Drexel University's APPetite for Health by integrating medium-level technology, as well as cooking and physical activities into the lessons.  The digital resources included educational YouTube videos, computer-based activities, online surveys, and polls, guided Google searches, and digital educational games.  To determine which strategy the youth preferred the most, EFNEP implemented three lessons with medium-level technology and two lessons without technology (posters and food models only).  During the first and last classes, the youth completed a Qualtrics survey to assess their dietary behaviors and rate the activities they enjoyed the most.  

The data showed that the middle and high school students enjoyed the medium-level technology, especially YouTube videos. The physical activities and cooking activities remained popular with this age group. EFNEP will share lessons learned when using medium-level technology with youth, and additional analysis will be conducted to determine if this blended approach positively impacted their dietary behaviors.

Expanding a Community Partnership in Florida: EFNEP, Florida Hospital Tampa, and Tungett Citrus & Produce
Introduction
Food insecurity is a problem impacting families across the nation. Within Florida’s Greater Tampa Area, fourteen percent of households are food insecure. Households with children are more likely to be food insecure than those without children. Food insecurity is associated with many negative health outcomes. The University of Florida IFAS Extension EFNEP (EFNEP) partners with Florida Hospital Tampa and Tungett Produce to provide increased access to fruits and vegetables, nutrition education, and health screenings to EFNEP participants. This study examines changes in food security status among participants.

Methods and Results
All study participants received nutrition education and health screenings. Half of the participants received food vouchers redeemable at a produce vendor after each of the eight classes. Food security data from the Food and Physical Activity Questionnaire were analyzed for changes in food security status. Findings will be discussed.

Implications
Little is known about the food security status of EFNEP participants. New, validated food security survey questions paired with a quasi-experimental design comparing similarly situated participants but with half receiving increased access to fruits and vegetables and the other half not, will contribute to EFNEP coordinators understanding of whether this approach should be considered for replication at other institutions.

Healthy Children, Healthy Families: Parents Making a Difference! A Randomized Controlled Trial
Healthy Children Healthy Families (HCHF): Parents Making a Difference! is an 8-session  curriculum designed for use in EFNEP to promote parenting practices that positively influence children's healthy eating and active play.  A randomized controlled trial was conducted to assess 1)  impacts of HCHF on parenting practices and self-efficacy, parent diet quality and physical activity, and child diet quality and physical activity from baseline to post-education as compared to a delayed intervention group; and 2) retention of behavior change longitudinally over 16 weeks post-education.  Low-income parents (n=392) of children 3-5 years old from 11 daycares in New York City were randomized. EFNEP paraprofessionals delivered the lessons in either English or Spanish, depending on the language preference of the parent group; approximately half the groups were Spanish and half English-speaking. Data were collected 4 times, approximately 9 weeks apart, by data collection staff, not by educators.  The final data collection provided information about the retention of behavior change in the medium term.  Complete data [all four data collection points] were collected on 229 participants. Participants reported pre- to post-behavior change. Complete data will be presented.

Healthy Choices for Every Body
Healthy Choices for Every Body was developed by the University of Kentucky Cooperative Extension Service Nutrition Education Program. This curriculum is primarily used by NEP Assistants to teach limited resource adults about healthy eating and physical activity. The curriculum is based on the 2015 Dietary Guidelines for Americans and includes sixteen lessons focused on nutrition, food safety, food resource management, food preparation and physical activity.

Healthy Choices for Every Body is for low literacy, limited resource audiences. Written materials are produced on a sixth-grade reading level, using best practices from adult education. A variety of delivery methods and teaching techniques are used to deliver the program. Food demonstrations are part of every lesson. Materials are available in English, Spanish and Braille. A strong marketing component is included that focuses on traditional and social media platforms.

The Bountiful Backpack Program - Implementing the Nourishing Native Children Feeding our Future Programs in South Dakota Tribal Communities
SDSU Extension developed the Bountiful Backpack program, a nutrition education and food preparation curriculum that teaches youth in grades 3 to 5 basic cooking skills and encourages them to practice cooking the in-class recipes at home with their family. The program is designed to be coupled with foods sent home in a backpack program. There are over 20 recipes to be coupled with and lessons that can be customized to meet EFNEP youth graduation requirements. This program was implemented in tribal communities across South Dakota since its inception, but more recently as a part of the Nourishing Native Children, Feeding Our Future programs in both school, summer school, and after school program settings. A total of 385 youth participated and completed the EFNEP pre- and post-test. This poster will showcase the curriculum, describe the survey results, and share the best practices and lessons learned for implementation of the overall program.

Utilizing the Blended Lesson Model to Increase Graduation Rates: A Study of Online Lesson Feasibility
In an effort to shape the future of EFNEP and stay current with technology trends, a pilot project was conducted as a feasibility study of participants' reactions to an online lesson as a part of their EFNEP series. The initial pilot was implemented in English language only, with one lesson from the Families Eating Smart and Moving More curriculum - Shop: Get the Best for Less. This lesson utilized the curriculum recipes, move more activities, and tips that are provided in traditional face to face lessons. Participants were able to access the lesson online by watching a series of ten short video clips. Included in these videos were a series of practice activities to ensure that participants understood the concepts taught. The only requirement of participants who chose to partake in the pilot was access to the internet and an electronic device (smart phone, tablet, computer etc.). As a result of participant feedback, changes were made to the pilot lesson to improve participant satisfaction and clarity of the lesson. Participants found the lesson to be fun, helpful, and convenient for their busy lives. Additional lessons are being developed in English and Spanish to increase graduation rates of EFNEP participants.

Community Impact and PSE Panel
The Community Partnership Impact-Policy, Systems, and Environmental Change presentation will provide the audience with an overview of efforts from around the country.
 
Participants will:
  • Familiarize themselves with the two online training courses in PSE implementation that were partially funded by the Regional Nutrition Education Center of Excellence initiative. Audience members will be asked to consider how the content of these courses might apply to the EFNEP work in their respective state (Cornell University);
  • Familiarize themselves with visuals and resources used to complete a mapping activity to revitalize EFNEP recruiting in areas of diminished partnering.  Attendees will learn how to identify areas of need and restructure recruitment efforts to assure parity of programming (University of Arkansas);
  • Learn how EFNEP can use WebNEERS data to make decisions about its community partnerships. By comparing retention rates and outcomes among partner types, EFNEP can make strategic decisions about partnerships, improve the quality of its lessons, and work with the broader policies, systems, and environment to increase impact (University of Maryland-College Park);
  • Learn about the results from a recent Community Partnership Impact-Policy, Systems, and Environmental Change survey.
