Healthy Choices for Every Body was developed by the University of Kentucky Cooperative Extension Service Nutrition Education Program. This curriculum is primarily used by NEP Assistants to teach limited resource adults about healthy eating and physical activity. The curriculum is based on the 2015 Dietary Guidelines for Americans and includes sixteen lessons focused on nutrition, food safety, food resource management, food preparation and physical activity.

Healthy Choices for Every Body is for low literacy, limited resource audiences. Written materials are produced on a sixth-grade reading level, using best practices from adult education. A variety of delivery methods and teaching techniques are used to deliver the program. Food demonstrations are part of every lesson. Materials are available in English, Spanish and Braille. A strong marketing component is included that focuses on traditional and social media platforms.
